Whether each shoulder sits higher or lower than average. Left and right are set on their own, because asymmetry is common.
On a try-on
A high shoulder makes fabric roll or gather under the collar on that side, and more roll means a higher value.
A sloping shoulder makes diagonal folds around the armhole, both front and back, with the fabric hanging loose at the shoulder point.
Without a try-on
Look from the front with shoulders relaxed and compare the two heights. About 1 cm of difference is roughly a value of 1.0. With a well-fitting garment on, check whether the shoulder seam is pulled up or pushed down on one side.

When in doubt
Asymmetry is one of the hardest things to judge without a fitting, so default to Regular.
